first_imgOn 23 November, Cathy Wagstaff, Group Editor and CEO of Signature Media, along with a select group of VIP guests, attended the Sydney celebration of the reopening of The Ritz Paris, at Collette Dinnigan and Bradley Cock’s recently sold Watsons Bay residence.The luncheon was hosted by Roxy Jacenko, Founder and Director of Sweaty Betty PR, and Craig Adamson, Director, Australia and New Zealand, The Leading Hotels of the World.The lavish menu included filo pastry cigars with black olive salt on arrival; an entrée of ocean trout confit with Avruga caviar, cucumber carpaccio, fine herbs and spiced tomato oil; a main of milk-fed lamb with vegetables, snow peas and blueberry jus, and seasonal green leaves with chardonnay vinegar; and a dessert of chocolate almond nougat truffles and pistachio small cakes with poached peach.Cathy Wagstaff commented, “The house was built for entertaining.” The dining room was decorated with rose-coloured floral arrangements by lilac & willow, Rosebay, and guests were entertained by a talented pianist playing a grand piano throughout the afternoon.Dinnigan’s Watsons Bay house has recently been sold, just 18 months after she bought the former Masonic Temple for $6.25 million. The listing also comes after a lavish renovation of the property, with Dinnigan and her brother, Seamus Dinnigan, adding her signature design touches to the interiors.The Ritz Paris is now open after closing for renovations for the first time ever in 2012. Founded by Swiss entrepreneur César Ritz in 1898, the hotel is famed as the stomping ground of figures such as Charlie Chaplin, Coco Chanel and Ernest Hemingway, who has a small bar named after him.“When I dream of afterlife in heaven, the action always takes place in the Paris Ritz,” Hemingway once said of the hotel.The refurbishment of the hotel, estimated at $150 million, was intended to modernise and spruce the grande dame to cater for the tastes of its discerning clientele and restore its former ‘ritz’.last_img
